Michelin Guide Tokyo 2024
Michelin awards for Tokyo 2024 were announced today (5th December 2023). Below is the full list of starred restaurants with breakouts for promotions, demotions and deletions. As usual, Michelin don't publicize demotions and deletions in the Japan Guides but you can find that information here. Included is the Tabelog rating as at 5 December 2023, a link to the restaurant's Tabelog page and any 2023 Tabelog Award designation. After the Starred restaurants, a table with the changes to Bib Gourmand restaurants. No predictions this year as I did so poorly last year and because many of the newly started restaurants were pre-publicised earlier in the year.
2-Star additions are very quiet for a second year with just one new entry and no promotions.
There are some major deletions this year. Rather than being promoted to three stars, four of the best sushi restaurants in Tokyo are deleted: Sawada, Sugita, Amamoto and Takamitsu. Amamoto is now introduction only following an incident where a customer discarded the rice in her sushi under the counter, eating only the fish. With 60,000 people registered for the Omakase 'lottery', the chance of getting a seat without a referral was always vanishingly small but now it's gone entirely. I'm not aware of a change in policy for 2024 with the other three so why they've been deleted is a mystery. On the other hand, Harutaka (possibly the most friendly of the top sushi restaurants to overseas guests, and possibly why it has happened) is promoted to Three Stars. Akasaka Ogino is deleted (fully booked through 2024), Tacubo is inexplicably deleted and there are a huge number of Bib Gourmand removals.
Michelin have introduced a new category of "Selected" restaurants. It's not clear what the criteria are but "Selected" restaurants rank lower than 1-Star. This category is useful for restaurants like Canade which were dubiously included as a Bib Gourmand in the past, even though there was no prospect of getting a complete meal to meet the JPY 6,000 "menu" criteria. On the other hand, a number of chefs are going to be disappointed that they were trailed for inclusion this year but are only "Selected" and not Starred. Does one congratulate the chefs or not? There are 142 new restaurants which are "Selected". I don't have much interest in trying these in particular. Conversely, new Bib Gourmands are disappointingly muted. 38 new restaurants last year but only 9 this year. I'm very interested in good meals in the low thousands but I'm less willing to take a punt on something costing 10k or 20k which Michelin don't think is even Star worthy.
The three starred ramen restaurants are demoted to Bib Gourmand.
This is unlikely due to drop in quality but more likely due to change in
criteria, with the new "Selected" category. Discounting Sant Pau (closed) and Ode (closed for now as the chef was arrested for drink-driving) 32 restaurants lose Star status. That's quite the purge.

Although Sawada, Sugita, Amamoto and Takamitsu are not members-only, they are virtually impossible for ordinary travellers to book. I think that's probably why they got deleted from the guide. It also applies to last year's Jiro and Saito. After all Michelin Guide is still a "traveller's guide".
ReplyDeleteTakamitsu is possible for foreign travelers to book through Tableall if they have very flexible schedules and ask 6 months in advance. I recently tried to book them but could only get dates when I would not be in Japan.

DeleteI would have considered Sugita's private room fairly do-able (we did get lucky in August at weekly release, although they seemed to have randomized release time like Sawada since then). Maybe that doesn't count? Absolutely no idea how decisions are made.
ReplyDeleteAmamoto has gone introduction only now. I updated the post. Haven't heard about any policy change elsewhere. Saito became strictly members/introduction only in the year it was removed. Makimura (kaiseki) hasn't taken reservations from new guests (local or overseas) for years yet still retains three stars.
