Yama might be considered the premier dessert restaurant in Tokyo but even more exclusive is Kominasemako. It's a restaurant with a ton of rules. No in-store photography is allowed and you're not even allowed to take notes.Of the photos that are on Tabelog or you might find on Instagram, these are a mix of older shots when in-restaurant photos were allowed, items you can take away after the course and special cake orders, so mostly useless. The menu changes several times a year. I was particularly pleased that my visit was for the pistachio course. Full menu (as best as I can remember) at the end. I'll keep my evaluation brief.
The inclusive non-alcohol pairing, mainly original teas, was less to my taste but I did enjoy all the desserts. The freshly-whipped chiboust was the best I'd ever had. But nothing was Earth-shatteringly good and six small desserts and 6 tiny beverages is just not good value for JPY 30,000. That's JPY 5,000 per item. Would you pay JPY 5,000 for a cup of tea and a scone or a quenelle of ice-cream?
I don't really need the faux theatre and despite the vibe of sitting in front of the headmistress if it had been half the price I'd have probably gone back in another season and been much happier. I get that the chef is using some of the finest pistachios you can buy but I'm not convinced that any improvement in flavour you might get is worth what I assume is a hefty premium over a lower class product, at least for what was served here. While that chiboust was good, I don't remember anything else about the dish. At this price, there need to be at least a couple of unforgettable dishes, a couple of dishes where you think you'll never be able enjoy them as much again anywhere else. And of that there was nothing.

๐ฑ Booking: ⬛ Introduction only, in principle, but the chef occasionally opens up reservations to Instagram followers. Follow @kominasemako_dessert and wait for an announcement. You'll need to fill out a form on their Website in Japanese only and pay the non-refundable course fee in advance by bank transfer.
