The neta was quite variable in quality. The kinmedai, sumi ika, chutoro and hokkigai were the best pieces. The anago and aji were standard. The akami had good flavour but a mealy texture. Flavour from the kuruma ebi was okay but it lacked a bit of firmness. The kohada was thin and salty. The iwashi had no firmness at all, almost no flavour and was washed out with sudachi. Rice was mildly sour but very al dente and on the dry side.
There was a load of grit in the shijimi like they hadn't been properly washed so I couldn't finish the miso soup. That's an easy fix and I told the chef outside as he saw me off so hopefully it won't happen again.
The chef didn't say a word for 5 or 10 mins while doing prep then burst into life initiating conversation in both Japanese and English, addressing guests by name. I haven't sat opposite another sushi chef with better English.
Although service was good, on account of the variable quality of the neta and dry rice I would not go back.
