Matsuno Sushi has been open since 1968 and is located in a suburb of Tokyo. This is a proper local, old school sushi restaurant with tiny seats and fish pre-cut covered with cling-film.  If you're looking for Instagram likes, this restaurant isn't going to get you many.  You can choose between omakase with or without tsumami, priced from JPY 7,000 and JPY 5,000, respectively, or go okonomi.

Most of the sushi I rated 8.5/10.  There were no expensive fish included in the set, which is to be expected at this price.  "Maguro zuke" was described exactly that way and was somewhere between akami and chutoro: this was the only piece of tuna in the meal.  Seasonings were fairly strong, which is how I like them, the zuke being particularly strong.  Rice was on the dry side and mildly sour.  Uni is included in the course with tsumami as a mini donburi with ikura.  I requested uni and negi-toro as extras.  The uni I rated 8.5-9/10.  The negi-toro was disappointingly served as a temaki.

On my visit the chef worked without assistance, which was a surprise as my reservation was taken by someone else.  With 7 other diners to serve arriving at arriving at 5 different times, the meal moved quite slowly and water/tea was not really topped up.  There was no conversation from the chef but all the sushi was named and the chef was inscrutable but polite.

The final bill was quite a bit more than I was expecting.  It would have been more economical to request the course with tsumami than order extras.

In terms of the food, the only fault was with the aji, which was a bit fishy.  Had it not been for that and had chef had an assistant to attend to guests I would have rated Matsuno Sushi 4+ and been thinking about returning soon for the full course.  As it is, while not in a hurry, I would still probably go back if I could get a same day dinner reservation.
