Kamamoto Hantei is a sister restaurant to Kamamoto Tanbei, a very popular gyutan restaurant in Ebisu (review to come). I went on opening day, 3rd June 2022. There was a small queue at lunch but I went back at around 4pm and was seated straightaway. As with Tanbei you pay (cash and all types of card taken) and choose at a touchscreen as you walk in. Assuming I might have difficulty one of the staff helped me out (in Japanese) with the Japanese-only interface. You can preview the menu (in Japanese) on Tabelog. The basic set of 180g aged wagyu burger is priced at JPY 1,800. You can add Camembert cheese for another 400 yen. Each additional 30g of beef is priced at 200 yen. I went for the basic option. Also as at Tanbei the set includes a choice of two side dishes. I chose gyutan curry and raw egg. The burgers are served, essentially, raw in the middle. I asked for my hamburg well-done. It doesn't make for the best pic but I don't care about that.
Food arrived after about 10 mins. The burger was still very rare in the middle so I cooked it through on the teppan. The meat had a very loose texture, not much firmer than some clumped-together mince and had a little gristle. There was good flavour from the aging but a lack of umami, probably due to the amount of fat in the meat. The set comes with two sauces, both fairly standard. The gyutan curry was a bit of a let down and the miso soup was ordinary. Rice was outstanding for a set meal. As with Tanbei you get your own kettle but unlike here it's pre-cooked and you can have a second kettle for free if you hand the staff the token in the drawer under the table where you'll find your chopsticks. There's no equivalent of the bottomless stewed tendon you get at Tanbei.
You would have never guessed from the service it was opening day. I recognised the grill man from Tanbei. He ran a tight ship there and was doing the same here.
There are many places serving a hamburg set and there was nothing outstanding in this meal and no particular USP. For that reason, because the entry price is a little higher, and with no tabehodai element I wouldn't expect Hantei to be as popular as Tanbei. I can't see myself going back. Arabikidaze is still the best type of this restaurant I've found.
